Real raw honey — comb, propolis, and pollen still in the jar — is a more interesting food than the squeeze-bottle stuff. But it's still sugar, and "raw" won't fix your blood-sugar curve. The honest version, wrapped around the spoonful my mother gave me every morning as a kid.

The last morning of a good week — up early with my boy.

Every morning when my brother and I were kids, my mother gave us raw honey. Not occasionally. Not as dessert. A spoonful of the real thing, straight from a trusted beekeeper, before the day started. Did it make us healthier? I honestly don't know — it's an n=2 run by a determined mother with good instincts, not a controlled trial. But the ritual stuck.

Decades later, it's circled back. That clip up top is an early start with my son — a natural early riser. The same week, I finally tracked down the honey I'd been hunting for in Colombia. The delivery arrived with an actual chunk of comb inside the jar, plus propolis and pollen. My daughter could barely wait for it to open.

Now my own kids get the morning spoon. Some children inherit silver. Mine inherit amber — blood-gold, stolen politely from flowers.

Real honey is not squeeze-bottle honey

Honey starts as a genuinely complex food. Bees collect nectar, transform it with their own enzymes, drive the water out, and seal it in wax. The less it's heated and filtered afterward, the more of the fragile, heat-sensitive stuff survives — enzymes like glucose oxidase and amylase, some pollen and traces of propolis, antioxidant compounds like the polyphenols and flavonoids (darker honey generally carries more of those).

Processing changes that. A lot of mass-market honey is heated so it pours easily and resists crystallizing, then filtered — sometimes micro-filtered — until the pollen is gone. Heat degrades the enzymes and filtration removes the pollen, so some of what made the honey interesting goes with it. It's still honey — just a plainer version, with less of the delicate stuff intact, and much harder to trace back to where it actually came from.

Then there's adulteration, which is a real, well-documented problem — honey is one of the most faked foods on the shelf. Cheaper product gets stretched with rice or corn syrup, and lab testing keeps catching it. A label reading pure, natural, or even raw doesn't guarantee much about the journey from hive to jar. So the source matters more than the adjective on the front. Mine comes from Cocomá — unheated honey from a small Colombian apiary, comb in the jar, the hive's supporting cast still along for the ride.

Hot take: with honey, the label is marketing and the beekeeper is the product. If you can't find out who made it, you're buying the adjective, not the honey.

The chemistry inside the jar

Raw honey has real antimicrobial hardware. Its glucose oxidase slowly releases small amounts of hydrogen peroxide when the honey is diluted; on top of that it runs a low pH and a brutally high sugar concentration — an environment most microbes can't readily grow in. This isn't mystical bee aura, it's chemistry, and it's the same chemistry behind medical-grade honey dressings for wounds and burns. (Manuka adds another weapon, methylglyoxal — the MGO number on the jar.) But medical honey is a controlled, sterilised product made for the job. Don't smear breakfast honey into an open wound and call yourself a field surgeon.

Honey's oligosaccharides may also act as prebiotics — food for good gut bacteria like Lactobacillus and Bifidobacterium — though that's mostly lab and early work, not a proven effect from the amount on your toast. Still, it's one more way honey is a more complex thing than a spoon of plain table sugar.

The cough evidence is the most practical of the lot. In children over one, trials and reviews find honey can modestly quiet a nighttime cough and help them sleep — sometimes beating placebo and holding its own against common over-the-counter cough syrups, though the evidence is limited and depends a lot on what it's compared against. Part of it is probably just that it's thick and soothing on an irritated throat. Either way, for a kid over one, a spoon of honey before bed isn't folklore in a lab coat — it's one of the better-supported old remedies we've got.

Comb, pollen, and propolis

Honeycomb is honey in its original packaging — honey and beeswax, with whatever pollen and traces of propolis came along, instead of those things filtered out and sold back to you as three separate supplements. Chewing the comb pops pockets of honey while the wax comes along for the ride. It's sticky, faintly chaotic, and deeply satisfying. Count Dracula would approve of the presentation — maybe not the floral notes.

Propolis is the resin bees build from plant compounds to seal and defend the hive, and it shows genuine antimicrobial and antioxidant activity in the lab — biologically active, not an invisible force field, and not a meaningful daily dose at the amounts you get here. Bee pollen brings a little protein, some micronutrients, and more antioxidants; the quantity in a normal spoonful is small, so nobody's replacing lunch with it. But comb and a bit of cloudy sediment are at least a sign you're holding something less processed than the water-clear squeeze bottle.

How a biohacker actually uses it

Honey is legitimate athletic fuel. Its natural glucose-plus-fructose mix delivers fast carbohydrate through slightly different absorption paths — useful during endurance work or for topping the tank back up afterward. Not automatically better than every sports gel, but it tastes like food instead of something squeezed from a foil packet at kilometre thirty.

Then there's the pre-bed spoon. The idea is that a little honey at night tops off liver glycogen for steadier overnight fuel and fewer wake-ups. It's a popular biohacker move — but the hard evidence for the sleep payoff is thin, so treat it as an n=1 experiment, not a law of nocturnal biology. Try a measured spoonful, watch your sleep and your morning glucose, and keep it only if your own data backs it up.

Honey is still sugar

Now the stake through the hype. Honey is roughly 80% sugar by weight, mostly fructose and glucose — 60-plus calories a tablespoon, and it will raise your blood sugar. And here's the part the wellness crowd skips: "raw" is not a free pass on that. A honey's glycemic hit tracks mostly with its sugar makeup — how much fructose versus glucose it carries — plus the floral source, the serving size, and your own metabolism. The raw-versus-processed label barely enters into it. Some honeys land genuinely lower on the glycemic scale and some sit close to table sugar, and "raw" alone won't tell you which. What raw actually keeps is more of the enzymes, antioxidants, and pollen — a difference in composition, not a softer blood-sugar curve.

So a glucose-conscious biohacker treats real honey as a better sugar, not a supplement to megadose. One spoon is a ritual. Six spoons are a dessert wearing hiking boots.

And the hard line: never give honey to a baby under 12 months. Honey can carry bacterial spores that cause infant botulism — and this matters — the pasteurisation honey normally gets doesn't reliably kill those spores, so "pasteurised" is no safer here. Raw, processed, organic, sacred-mountain artisanal, doesn't matter: no honey before the first birthday. Anyone with a bee-product allergy should treat the pollen and propolis with the same caution. "Natural" has never meant "harmless."

The oldest biohack

I love sensors, weird protocols, and all the modern machinery of self-improvement. But a lot of the oldest "biohacks" are just real food, eaten consistently, long before anyone built a dashboard to measure it. My mother had no sleep score for our morning honey. She had a jar, two sons, and a ritual she believed in.

Now there's comb in my kitchen again. My son is up early. My daughter is waiting for her taste. The circle closes, one amber spoon at a time. Sometimes your grandmother already knew the protocol.
